Noma's Kyoto journey began in 2009 when Rene Redzepi was invited by renowned Japanese chef Murata-san. Immersed in Japanese food culture during a two-week course led by the three Michelin-starred chef, a love story with Japan unfolded. Over the years, Rene brought teams to Japan for inspiration, leading to a deep connection and our first popup in Tokyo in 2015. Inspired by Japanese architect Kengo Kuma during the pandemic, Rene envisioned a pop-up in Kyoto. After three years of preparation, our team of over one hundred arrived in Kyoto in 2023, exploring every corner of Japan, from mountains to Michelin-starred restaurants.
